While one of my favourite things to do is to cook and create new things my day to day food is very similar. There are the staple items like kids yoghurt, coconut milk, tinned tomatoes, beetroot and toilet paper etc that get bought at the shops on a weekly basis. But things like fruits and vegetables get replenished every 2-3 days. If I could get someone to invent a fridge for fresh produce lovers like my family i would be forever grateful so i didn't have to venture to the fruit and veg shop every 2-3 days.
So to honour some of my favourite foods i thought I would share with you some of my weekly highlights.
On a savoury note I have my Tomato Salsa. It contains carrots, zucchini and tomatoes. Thats it, its so simple. I cook it on the stove top add some basil or oregano and right at the end add some eggs. Served on a bed of cauliflower mash and it is a delightful breakfast.
Trying to maintain my dairy free life without spending a fortune on Coconut yoghurt had me being creative with the 'Yonana'. A small appliance that changes my favourite fruits into a velvety frozen yoghurt consistency. I have made a variety of variations this week but this was definitely the winner.
Another super simple desert.
The thing that takes the longest is washing up the machine. Ingredients includes frozen banana, cacaoa powder and a sprinkle of coconut. A deliciously smooth desert that tastes just likes ice cream and meets all key elements of a desert and is completely guilt free.
